What is the difference between Antietam AM and Antietam PM?
I assume they are both used in the Antietam Scenarios.

Yes they are both used in the scenarios. I'd have to double check but I think the PM map starts at the Sedgwick scenario.
For the PM map, the battle had been raging for over four hours, so the Corn is all flattened (and bloody) in the Cornfield, several more houses/barns are burning, the Confederates had removed the fence along the Bloody Lane and constructed breastworks, and the sky is an afternoon sky instead of morning.
