I discovered the issue... I had the new files set as stereo files so it wouldn't play. Changed to Mono and problem solved!

I've created .wav files and renamed them to match the original file names which I want to replace, I've created a mod folder with an intro text file and then I have a 'Sounds' folder with the replacement .wav files inside....
