Well you are in luck again!
I can identify quite a few of these items for you!
Pic 1
Looks like a brass shoulder scale to me, something that would have been worn on a dress uniform or by the heavy artillery. Hard to say exactly though as I can't tell it's dimensions. That's just a guess!
Pic 2
Spoon, yes. B)

Pic 3
Both items look very familiar but I'm not placing them at the moment, I will get back to you though if something eventually rings a bell.
Pic 4
Does look very much like some kind of stirrup or even a spur almost, hmmm.
Pic 5
You are close on the haversack guess! Actually most of those are parts and pieces of a Federal issue backpack. The two looped hooks at the top of the picture could also be off a rifle sling.
Pic 6

Pic 7
First item I am unsure about, the second is a metal heel plate from a pair of brogans, more than likely Federal issue.

Ahhh, my specialty, LOL!
1st thing is a Federal issue musket tool for taking apart a rifle, you can see the little wrench for unscrewing the nipple and how the swivel part is a screwdriver blade for tang and butt screws.
Bullet is a Williams cleaner bullet.
Just to the right of that is a trigger sear. It's the inner part of a rifle that when you pull the trigger the sear is what trips the hammer to fall.
The swivel with the screw is a sling swivel from a rifle, impossible to say what model.
Item to the far right is a lock spring. It's the spring inside the lock that makes the hammer drop and what makes the whole lock function.

Correct most likely pieces and parts of a mess kit!
Awesome stuff man, thanks so much for sharing!! I find all of it totally fascinating!
