My two favorites are the BritishGrenadiers and the RebDefence, the modded trees and terrain really does add to the game.

British Grenadiers is on Brandy Station and RebDefence is on one of Garniers random maps... 2_2 I think. Not sure, but all his maps are very photogenic with the bright blue skies and lush vegetation.
